You have probably noticed by now I’m pretty keen on recipes that smuggle hidden veggies, like these broccoli and cauliflower cheesy patties. It’s a mum thing. You have toddlers and small children and there’s always a battle to get the good stuff in them. I’m lucky my little miss loves fruit at least so there is one less battle involved… but veggies, not so much. So the key is finding great tasting food that has those secret benefits, such as these simple chicken veggie sausage rolls.
It also helps if you have a cute assistant like mine.
Simple Chicken & Veggie Sausage Rolls
500g chicken mince
Puff pastry sheets
1/4 cup honey
Salt & pepper
Sesame seeds (optional)
1 egg, whisked
1. Preheat oven to 200 degrees.
2. Grate vegetables (or put through food processor). Add to large bowl and combine with mince, seasoning and honey. Mix well.
5. Place on tray in oven and cook for 30 minutes or until golden on top.
6. Cut into desired sizes for serving. Can be served hot or cold.
You may wish to switch up the carrot and zucchini for other veggies you have on hand, like peas, corn, capsicum. Anything really. Be creative. You may also want to throw in some grated cheese.
Another option is freezing them before you cook them, then just popping them in the oven once they defrost as a quick and convenient lunch or dinner meal. They could certainly form part of your freezer cooking menu plan.
